       8 servings

3 – 4 cups pulled pork

1 – 2 cups bbq sauce

For the buns:

3 cups bread flour

1 cup warm water

3 tbsp warm milk

3 tbsp softened unsalted butter

2 tsp sugar

2 tsp salt

2 tsp dried yeast

2 eggs

Using the same bbq sauce
recipe as before, mix your sauce and pork, and put to one side.Mix your water, milk,
sugar and yeast in a bowl. Leave for about 5 minutes,
or until it starts to foam.Pour your flour into a
mixing bowl, and mix with the salt and butter. Mix with your hands or a
spatula until the mixture resembles breadcrumbs.Beat one egg, then add to
the flour mixture along with the foamy yeast, water, milk, and sugar.Use your hands and knead
until the mixture reaches a thick, consistent state.Roll into a ball, and
cover with a damp cloth. Allow to rise for 1 – 2 hours.Preheat your oven to 400
degrees.Once your dough has
doubled in size, separate into 8 small circles and place on a paper-lined
baking tray.Place a tray filled with 1
cup of water at the bottom of your oven. Doing this will release steam,
keeping your buns moist while baking.Beat your remaining egg
and brush each bun with an egg wash.Place your buns in the
oven and allow to bake for 15 – 20 minutes,
or until golden. While your buns bake,
simmer your pork and bbq sauce mixture on the stove. When your buns are fully
baked, allow to stand on a wire rack to cool.Slice your buns and fill
with your bbq pork and additional fillings of your choice.
